Cupid Crispies: White Chocolate Raspberry Rice Krispie Treats
Love at first bite! One of my favorite ice cream flavors is white chocolate raspberry with chocolate chunks, so I thought it would be fun to bring these flavors to Rice Krispies! They’re easy to make and are just as bright and beautiful as they are delicious!

To make the raspberry puree, simply add them to a small saucepan over medium low heat. Keep the lid off so moisture can evaporate. We want as much as the water content out of the raspberries so the Krispie Treats stick together well. This should take about 10-15 minutes on a low, bubbling simmer. You will know it’s ready when you drag a spoon or spatula across the bottom of the pan and the raspberries don’t fill in the empty streak.

These treats are as simple as melting butter, mixing in marshmallows to melt, add the cereal, then raspberry puree. I add 1/2 cup more of marshmallows and white chocolate chips towards the end of folding ingredients together so that they don’t all melt. I like having the added texture of whole marshmallows and solid chocolate chips in the bars!

The last step of drizzling melted chocolate on top is of course optional, but I love the addition of crunch and sweetness!

Cupid Crispies: White Chocolate Raspberry Krispie Treats
Ingredients
- 2 cup frozen raspberries
- ¼ cup butter
- 4 + ½ cups mini marshmallows
- 5 cups Rice Krispie cereal
- ¾ cup white chocolate chips
For the milk chocolate drizzle:
- ½ cup milk chocolate chips
- 2 tbsp butter
Instructions
- Add the 2 cups of frozen raspberries in a small saucepan over medium low heat. Allow to gently simmer with the lid off for 10 – 15 minutes to reduce the moisture and let them thicken. You know they are done when you scrape the bottom of the pan and the puree does not fall to the center.
- In a large saucepan over medium heat, melt the ¼ cup butter and add 4 cups of marshmallows. Reduce heat to low and stir until marshmallows are melted and combined with butter into a smooth mix.
- Add 5 cups of Rice Krispie cereal, cooled raspberry puree and ½ cup of mini marshmallows & gently fold cereal into melted marshmallow mixture. Be careful not to over mix and crush cereal. Before cereal is just combined, add ¾ cup of white chocolate chips, fold until they are just incorporated.
- Transfer to a parchment paper lined baking dish and gently pat into place (avoid crushing). Prepare chocolate drizzle.
- Melt chocolate chips and 2 tbsp of butter in a microwave or in a double boiler until smooth. Drizzle over krispie treats and store in the refrigerator for at least an hour before slicing and serving
