This small adjustment makes a big difference, giving the scones a soft, almost cake-like texture while still holding their classic shape. Juicy cherries and creamy white chocolate chunks add bursts of sweetness in every bite, making this recipe a standout for weekend baking or a special brunch treat.

While some bakers try to avoid cherry “bleed,” I actually love the way it adds character to these scones. When you use frozen cherries, they might release a bit of juice into the dough—but instead of ruining the look, it gives the scones a beautiful pink marbled effect. The swirls of color make each one look perfectly imperfect—rustic, homemade, and totally charming. So don’t stress if your dough picks up a little color along the way. It’s part of what makes these scones feel special: a little messy, a little artistic, and completely delicious.

Because the dough for these scones is intentionally a little wet (for that soft, cakey texture!), I like to handle it as little as possible. Instead of shaping and separating each scone individually, I gently press the dough into a round or rectangle right on the baking sheet, then perforate it into serving-sized portions using a dough cutter..

I press straight down to mark out wedges or squares—depending on my mood—but I don’t fully separate them. This way, the scones bake close together, which helps them stay moist on the sides and rise nice and high. After baking, they break apart easily along the cut lines, with beautifully soft interiors and those rustic edges I love.

Ingredients

  • cups all purpose flour
  • 1 tbsp baking powder
  • ½ tsp kosher salt
  • 2 tbsp granulated sugar
  • 12 tbsp cold butter grated
  • 1 cup buttermilk
  • 1 egg
  • 1 tsp vanilla
  • 1⅓ cup fresh or frozen cherries pitted
  • 1 cup white chocolate chips

For the Cherry Glaze

  • 1 cup powdered sugar
  • 2 tsp fresh cherry juice (4-5 fresh or thawed cherries)

Instructions

  • Mix together your dry ingredients of 2½ cups flour, 1 tbsp baking powder ½ tsp salt and 2 tbsp granulated sugar.
  • With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a mealy texture.
  • In a separate bowl, whisk together 1 egg, 1 cup buttermilk and 1 tsp vanilla. Add to the bowl of dry ingredients and mix until just combined.
  • Fold in cherries & 1 cup of white chocolate chips. If dough seems too dry, add 1 tbsp more of buttermilk until it is just sticky enough to stick to your hands. Spread into a circle onto a baking sheet and cut into serving sizes, the same way you would a pizza.
  • Bake at 350 degrees F for 15-20 minutes or until lightly golden on edges.

For the Cherry Glaze:

  • Crush the fresh or thawed cherries in a bowl with the back of the spoon until you have 2-3 tsp of cherry juice. Discard the flesh (enjoy a snack!)
  • Add 1 cup of powdered sugar to the bowl of cherry juice, stir until smooth and drizzle over cooled scones.
