High Protein Pumpkin Mac & Cheese

I’m always skeptical of high protein version of recipes, thinking there’s no way it can be as good as the original. But when I tell you this could go up against Velveeta in a blind taste test, I’m impressed! Perfect for when I want something comforting yet nourishing!

I found these cute pumpkin noodles at Trader Joe’s, but you could use any type of pasta!

High Protein Pumpkin Mac & Cheese

Made using only a few ingredients and prepared all in one pot, this is a must for a high protein, comforting meal!

Ingredients

  • 14 oz pasta of choice
  • enough water to cover the pasta in a shallow pan
  • 1 pinch of salt
  • 1 cup cottage cheese
  • ½ cup pumpkin purée
  • ¼ cup milk
  • S&P to taste
  • ½ cup shredded cheddar cheese

Instructions

  • In a large pan, add pasta, sprinkle of salt & just enough water to cover pasta laying flat in pan
  • Gently boil over medium high heat, stirring occasionally until most water is absorbed by pasta noodles
  • Blend cottage cheese, pumpkin, milk and seasonings of choice
  • Coat noodles in cheese sauce + shredded cheddar; stir to combine, letting any excess pasta water lend a silky texture to the Mac & cheese
