Slow Cooker Mashed Potatoes

This recipe was inspired by the annual dilemma of coveted space on the stovetop around holidays. Having a side dish that can be prepared in the slow cooker reduces kitchen traffic and most importantly allows you to spend more time with loved ones than over a stove burner!

Slow Cooker Mashed Potatoes

Ingredients

  • 5 lbs golden or russet potatoes peeled & rough chopped
  • 4 tbsp butter
  • 3 cloves of garlic
  • ¾ cup whole milk
  • ¼ cup chicken broth
  • 4 oz cream cheese
  • cup sour cream
  • fresh chives

Instructions

  •  Add your chopped potatoes, butter, salt, garlic, turkey broth and whole milk to the slow cooker. Cook on high for 3 hours or low for 6
  • Once tender, use a potato masher to mash until smooth. Add heavy cream, cream cheese and sour cream.
  • Top with minced chives

Notes

I choose not to peel my potatoes when making mashed.I don’t notice them in the final product and it adds an extra step of preparation!
