Strawberry Cheesecake Baked Oats (High Protein)

High Protein Strawberry CHeesecake Oats

Ingredients

  • ½ cup old fashioned oats
  • cup cottage cheese
  • 2 tbsp milk
  • 1 egg
  • tbsp real maple syrup adjust more for a sweeter batter
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 3-5 strawberries sliced + more for topping
  • 2 tbsp cream cheese
  • whipped cream for topping

Instructions

  • Preheat oven 350 F and grease an oven safe ramekin with coconut oil. In a blender, combine oats, cottage cheese, milk, egg, 2 ½ 2. tbsp maple syrup, vanilla and baking powder. Blend on high until smooth.
  • Mix 2 tbsp of cream cheese with 2 tsp of maple syrup in a small bowl. Transfer half of the batter to the prepared ramekin. Add half of the sliced strawberries to the batter and the sweetened cream cheese to the center of the batter. Top with remaining batter and strawberries.
  • Bake for 30 minutes and allow a few minutes to cool before topping with more strawberries and whipped cream.
  • Best served WARM! Would be so good w a drizzle of male syrup on top too!
