Almond Joy-inspired banana bread with Skyr yogurt, melted butter, real maple syrup, and a decadent coconut, chocolate, and almond crust in sweetened condensed milk.
Mash 3 bananas in a large mixing bowl until smooth. Add 2 eggs, 1 tsp vanilla, 5 tbsp melted butter, ⅓ cup maple syrup & ½ cup yogurt. Whisk to combine.
Add 1¾ cups of flour & 1 tsp baking soda to the mixture. Stir until flour streaks are almost gone, then gently fold in chocolate chips, coconut shreds and almonds.
Place in a lined loaf pan & bake at 350 F for 50-60 mins, until a toothpick inserted comes out with crumbs instead of wet batter.
While the loaf is baking, add the topping ingredients to a small bowl and stir to combine. Top with loaf once it is baked and return to oven at 475 for 4-6 minutes, broiling for an extra minute at the end if you'd like it slightly crispy.
Allow to completely cool for the crust to form, slice and enjoy!
