2cups Kodiak protein pancake mix see notes for substitution
Instructions
In a large bowl add wet ingredients of milk, eggs, cottage cheese & syrup. Blend with a blender or immersion blender until smooth.
In a separate bowl, add brown sugar, spices & protein pancake mix (OR baking powder & flour). Slowly add to wet ingredients and stir as you add. While batter is still clumpy, add grated apples and fold into batter, leave batter lumpy.
Add spoonful of batter to the center of a hot waffle iron, use nonstick spray every few waffles.
Store in an air tight container in the freezer and reheat in a toaster or toaster oven.
