Chocolate Cashew Granola

Ingredients

  • 2 cups old fashioned oats
  • ½ cup halved cashews (adjust to your liking)
  • ¼ cup cacao powder
  • ¼ cup real maple syrup
  • 1 tsp vanilla
  • ¼ cup melted coconut oil
  • cup shredded coconut

Instructions

  • preheat oven to 350 F & line a baking sheet with parchment paper, set aside
  • in a large bowl, combine your dry ingredients of oats, cashews, and cacao powder. Stir to combine
  • In a separate small bowl, combine maple syrup, coconut oil and vanilla, mix to combine and add to bowl of dry ingredients. Stir until evenly coated and spread on lined baking sheet.
  • bake for 20 mins, taking out half way through and giving them a mix. Top with coconut shreds and bake an additional 5 mins.
  • transfer to a cooling rack and let come to room temperature before breaking up bark and sealing in a jar.

Store in a sealed container!
