preheat oven to 350 F & line a baking sheet with parchment paper, set aside
in a large bowl, combine your dry ingredients of oats, cashews, and cacao powder. Stir to combine
In a separate small bowl, combine maple syrup, coconut oil and vanilla, mix to combine and add to bowl of dry ingredients. Stir until evenly coated and spread on lined baking sheet.
bake for 20 mins, taking out half way through and giving them a mix. Top with coconut shreds and bake an additional 5 mins.
transfer to a cooling rack and let come to room temperature before breaking up bark and sealing in a jar.
