Add dry ingredients of flour, brown sugar, baking soda and baking powder in a bowl and mix to combine.
In a separate large bowl, add eggs, cottage cheese, vanilla & milk. Blend with an immersion blender until smooth, then add dry ingredients.
Fold in dry ingredients, leaving the batter somewhat lumpy for fluffier pancakes
Place 3 tbsp worth of batter on a hot griddle and add blueberries to the wet side of the batter on the griddle. Flip pancakes and top with fresh peaches and whipped cream
