In a large skillet coated in oil, pan fry the thawed shrimp for 1 ½ minutes each side, until shrimp is fully cooked.Remove from skillet & sauté garlic in 2 tbsp of butter until fragrant, about 2 mins.
Add lime juice & honey and gentle simmer for about 2 mins until it begins to thicken. Toss the shrimp in the sauce and set aside
Preheat oven to 425F. Spray or coat the corn tortillas with cooking spray/ any oil. Place on a lined baking tray and place in oven for 3 minutes.
Layer shredded cheese on half of a warm tortilla, layer with a few pieces of shrimp, topping with more cheese. Fold tortilla over the shrimp and press down, forming a taco. Repeat step for all on baking sheet.
Bake for 12 minutes. Serve with guacamole for dipping
