Combine all ingredients for cheese ball in a large bowl and gently fold together until combined. Transfer to a large sheet of Saran Wrap and tightly seal and wrap with an additional sheet of wrap if needed, forming a ball shape. Chill in fridge the day before needing or in freezer for several hours.
Once cheese ball has chilled, roll in pistachio coating until completely covered and garnish with more fig jam. Enjoy with toasted crostini or crackers.
