This healthy Pistachio Banana Bread is sweetened with maple syrup and packed with protein from skyr yogurt. Ripe bananas provide natural sweetness, while pistachios add a crunchy texture and healthy fats. It's a nutritious, delicious option for breakfast or a snack!
Mash 3 bananas in a large mixing bowl until smooth. Add 2 eggs, 1 tsp vanilla, 5 tbsp melted butter, ⅓ cup maple syrup & ½ cup yogurt. Whisk to combine.
In a food processor or blender, pulse ¾ cup pistachios until smooth. Add to mixture, as well as 1¾ cups of flour & 1 tsp baking soda. Stir until flour streaks are gone, then gently fold in chocolate chips.
Place in a lined loaf pan & bake at 350 F for 50-60 mins, until a toothpick inserted comes out with crumbs instead of wet batter.
