In a medium saucepan, add your caramels and coconut oil and melt over medium low heat, stir frequently until smooth and completely melted.
Peel and pit your stone fruit. Rough chop and reserve 1 cup of chopped pieces, add the rest to a blender. Add 1 tbsp of vinegar and blend until smooth.
Add the fruit puree to your melted caramel and mix over medium heat to combine. It’s okay if it seizes up, keep stirring and it will combine.
Add the reserved fruit pieces to the mix and let gently simmer for about 2-3 minutes to come together.
