High Protein Blueberry Peach Pancakes

I made these pancakes for my husband some of his rugby teammates before they had a game and I waited until after they had scarfed them down to tell them there was COTTAGE CHEESE in them! They couldn’t believe it. Not only delicious but high in protein and the perfect start to your day to keep you full for hours!

High Protein Blueberry Peach Pancakes

You would have no idea that cottage cheese is a main ingredient in these pancakes! Light, fluffy, & so delicious, the perfect way to start your day!

Ingredients

  • 2 cups flour all purpose
  • 3 tbsp brown sugar
  • tsp baking soda
  • ¾ tsp baking powder
  • 2 eggs
  • cup milk
  • 1 cup cottage cheese
  • 2 tsp vanilla
  • cup blueberries
  • fresh peaches peeled & sliced
  • whipped cream for serving

Instructions

  • Add dry ingredients of flour, brown sugar, baking soda and baking powder in a bowl and mix to combine.
  • In a separate large bowl, add eggs, cottage cheese, vanilla & milk. Blend with an immersion blender until smooth, then add dry ingredients.
  • Fold in dry ingredients, leaving the batter somewhat lumpy for fluffier pancakes
  • Place 3 tbsp worth of batter on a hot griddle and add blueberries to the wet side of the batter on the griddle. Flip pancakes and top with fresh peaches and whipped cream
