Stone Fruit Caramel Topping

Stone Fruit Caramel Sauce
A taste of summer in every bite, swap the plums for nectarines, peaches, sweet cherries or a combination of all!
Ingredients
- 2 cups caramel candies
- 1 tbsp coconut oil
- 5-6 your favorite stone fruit I use plums, but you could also use peaches, cherries, or a combination of your favorites!
- 1 tbsp champagne vinegar
Instructions
- In a medium saucepan, add your caramels and coconut oil and melt over medium low heat, stir frequently until smooth and completely melted.
- Peel and pit your stone fruit. Rough chop and reserve 1 cup of chopped pieces, add the rest to a blender. Add 1 tbsp of vinegar and blend until smooth.
- Add the fruit puree to your melted caramel and mix over medium heat to combine. It’s okay if it seizes up, keep stirring and it will combine.
- Add the reserved fruit pieces to the mix and let gently simmer for about 2-3 minutes to come together.
- erve over waffles, pancakes, oatmeal, ice cream & more!
