Blueberry Bourbon Smoked Tri Tip

I’ve had a lot of fun incorporating seasonal produce into more of my recipes, and blueberries shouldn’t just be constraind to breakfast and baking. This Blueberry Bourbon BBQ Sauce combines the natural sweetness of blueberries with the deep, smoky richness of bourbon.

Blueberry Bourbon Smoked Tri Tip

If you love smoked brisket but don't love the price tag and how it takes all day to smoke, reach for the tri tip!

Ingredients

For the tri tip:

  • Tri tip cut ½ lb / person
  • cup yellow mustard
  • cup brown sugar
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder

For the blueberry bourbon sauce:

  • ½ red onion
  • 2 cloves of garlic minced
  • cup bluberries fresh or frozen
  • ¾ cup ketchup
  • 2 tbsp molasses
  • 2 tbsp Worcestershire
  • ¼ cup apple cider vinegar
  • ½ cup brown sugar
  • 1 tsp paprika
  • 1 tsp chili powder
  • S&P to taste

Instructions

  • Coat the tri tip in mustard and massage in the dry rub of brown sugar & spices. Smoke at 220F for 2.5 hours, spraying with apple/ cranberry juice every 30 mins.
  • Once the internal temperature reaches 130-135F, char on grill for 1 min each side

For the blueberry bourbon sauce:

  • Sauté red onion & garlic in a tbsp of butter in a medium pot until translucent, about 5 mins.
  • Add blueberries & all other ingredients, bring to a gentle simmer for 30 mins, use an immersion blender to blend until smooth
  • Adjust seasonings to taste, for a more zip taste add more vinegar, for sweeter add more sugar & ketchup
  • Slice trip tip & enjoy!
