Apple Pie Protein Waffles

I’m always lookingfor a grab and go breakfast option that I can take with me on the way to the gym for some sustained energy. These protein packed waffles are so easy to make, freeze, and toss in the toaster oven! I usually will make a big batch on Sundays for the week ahead and store in the freezer.

Apple Pie Protein Waffles

High protein and a bite of apple pie in each bite!

Ingredients

  • ½ cup milk
  • cup cottage cheese
  • 1 cup skyr vanilla yogurt or Greek yogurt
  • 2 eggs
  • 1 tbsp real maple syrup
  • 1 tbsp brown sugar
  • 1-2 apples grated
  • 2 cups Kodiak protein pancake mix see notes for substitution

Instructions

  • In a large bowl add wet ingredients of milk, eggs, cottage cheese & syrup. Blend with a blender or immersion blender until smooth.
  • In a separate bowl, add brown sugar, spices & protein pancake mix (OR baking powder & flour). Slowly add to wet ingredients and stir as you add. While batter is still clumpy, add grated apples and fold into batter, leave batter lumpy.
  • Add spoonful of batter to the center of a hot waffle iron, use nonstick spray every few waffles.
  • Store in an air tight container in the freezer and reheat in a toaster or toaster oven.

Notes

Substitute for the Kodiak protein pancake mix:
2 cups flour, 1 scoop of protein powder of choice (optional), 2 tsp baking powder
