Apple Cinnamon Loaf Cakes
These soft and tender Apple Cinnamon Loaf Cakes are made with fresh chopped apples, warm cinnamon and apple pie spice, and a buttery batter, then finished with a cinnamon-sugar swirl on top.
Ingredients
- 2 cups granulated sugar
- 4 cups all purpose flour
- 2 tbsp baking powder
- 1 tsp salt
- 1 tsp apple pie spice
- 1 tsp cinnamon
- 2 cups whole milk
- 2 eggs
- 2 tsp vanilla
- ⅔ cup melted butter
- 2 apples peeled, cored and finely chopped
For the cinnamon sugar topping:
- ⅓ cup granulated sugar
- 1 tsp cinnamon
- ½ tsp apple pie spice
Instructions
- Preheat oven to 350℉ & line two 9×5" loaf pans with butter or parchment paper. In a large bowl, combine dry ingredients of sugar, flour, baking powder, salt, apple pie spice + cinnamon. Whisk until combined, set aside.
- In a separate large mixing bowl, add milk, eggs, tsp vanilla and melted butter, beat with a hand mixer or whisk until combined.
- Gently add the dry mixture to the wet ingredients and stir until there are no dry flour steaks in the batter. Add chopped apples and fold to combine.
- Transfer batter to loaf pans and combine all topping ingredients of sugar, cinnamon and apple spice to a bowl and sprinkle on top of the batter. Swirl into loaf using a knife.
- Bake 35-40 mins or until toothpick inserted comes out free of batter.
