Chocolate Cashew Granola
I never knew how easy it is to make granola at home. Makes me wonder why I’ve bought it from the store all these years! It’s very easy to customize to whichever flavor is your favorite, butI love this combination of cashews and chocolate to go with vanilla bean yogurt!

Chocolate Cashew Granola
Once you experience how simple it is to make granola at home, you'll never buy it again!
Ingredients
- 2 cups old fashioned oats
- ½ cup halved cashews (adjust to your liking)
- ¼ cup cacao powder
- ¼ cup real maple syrup
- 1 tsp vanilla
- ¼ cup melted coconut oil
- ⅓ cup shredded coconut
Instructions
- preheat oven to 350 F & line a baking sheet with parchment paper, set aside
- in a large bowl, combine your dry ingredients of oats, cashews, and cacao powder. Stir to combine
- In a separate small bowl, combine maple syrup, coconut oil and vanilla, mix to combine and add to bowl of dry ingredients. Stir until evenly coated and spread on lined baking sheet.
- bake for 20 mins, taking out half way through and giving them a mix. Top with coconut shreds and bake an additional 5 mins.
- transfer to a cooling rack and let come to room temperature before breaking up bark and sealing in a jar.
Notes
Store in a sealed container!
