Korean Beef Lettuce Wraps

I’m always looking for more creative ways to utilize ground beef, and this is one of my favorite ways to mix up weeknight dinners! It’s light, refreshing and high in protein to leave you satisfied.

Korean Beef Lettuce Wraps

An easy, ground beef dinner idea that is light, refreshing and full of flavor!

Ingredients

  • 1 lb ground beef
  • 1 tbsp sesame oil
  • 1 tbsp white pepper
  • 3 cloves minced garlic
  • 1 red bell pepper thinly sliced
  • 1 cup matchstick carrots
  • 4 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp minced ginger
  • 1 tsp siracha
  • 1 tbsp brown sugar
  • 2 tsp corn starch
  • 1 tbsp water
  • bib lettuce for wraps
  • green onion for garnish
  • sesame seeds for garnish

Instructions

  • In a skillet over medium high heat, begin browning the beef in the sesame oiled pan; halfway through, add the carrots, garlic and pepper, cook for about 3-4 mins until meat is cooked through and veggies have become tender
  • Mix ginger, soy sauce, sriracha, rice vinegar & brown sugar together in a small bowl and add it to beef. Create slurry with the cornstarch and water and add that to the pan as well.
  •  Cook for about 3 more minutes until sauce has thickened
  • If desired, serve over warm rice, or rice served in lettuce wraps. Garnish with green onion & sesame seeds
