S’mores Banana Bread
Made using ingredients like real maple syrup, melted butter and Greek yogurt, this Banana Bread is decadent, fluffy and the best flavor combination!

I infuse the s’more flavor in a number of ways – by adding chocolate chips and marshmallow chunks to the batter directly, but also adding crushed graham crackers to the dry ingredients! This really enhances the flavor and texture of the bread itself.

Once you bake the bread, you can either leave it as is or top it with graham crackers, marshmallows and chocolate chips. Both are delicious options, and served by itself still delivers on that classic s’more taste!

The toasty level is up to you, much like roasting marshmallows over an open fire! Some prefer them lightly toasted, some like them scorched, but be very careful to watch your banana bread closely when under the broiler. Just one minute toasts everything QUICK!

Allow the banana bread to cool at least 10 minutes before slicing and serving, as the marshmallows become quite sticky when melted!


S’mores Banana Bread
Ingredients
- 3 very ripe bananas
- 2 eggs
- ⅓ cup real maple syrup
- ½ cup Greek vanilla yogurt
- 1 tsp vanilla
- 5 tbsp melted butter
- 1¾ cup all purpose flour
- ½ cup crushed graham crackers
- 1 tsp baking soda
- ¾ – 1 cup chocolate chips
- ¾ – 1 cup mini marshmallows
Instructions
- Mash 3 bananas in a large mixing bowl until smooth. Add 2 eggs, 1 tsp vanilla, 5 tbsp melted butter, ⅓ cup maple syrup & ½ cup yogurt. Whisk to combine.
- Add 1¾ cups of flour , ½ cup crushed graham crackers & 1 tsp baking soda to the mixture. Stir until flour streaks are gone, then gently fold in chocolate chips and marshmallows.
- Place in a lined loaf pan & bake at 350 F for 50-60 mins, until a toothpick inserted comes out with crumbs instead of wet batter.
- Top loaf with a handful of marshmallows, chocolate chips and a few pieces of broken graham crackers, until the top is covered. Broil for 1-3 minutes until toasted to liking. Slice and enjoy!
