Bakery Style Brown Butter Pumpkin Chocolate Chip Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp kosher salt
  • 1 15 oz can pumpkin purée
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup butter
  • ⅓ cup whole milk
  • 1 tsp vanilla bean paste
  • 1 cup chocolate chips
  • 1 cup mini chocolate chips

Instructions

  • Preheat oven to 350°F.
  • Line a standard muffin pan with liners. Add ½ cup butter to a light-colored saucepan over medium heat. Melt, then continue cooking, stirring or swirling frequently. The butter will foam and sizzle; keep cooking until the milk solids at the bottom turn golden brown and the butter smells toasty and nutty. Immediately pour it into a heatproof bowl, including all the browned bits, so it doesn’t burn. Let cool for about 5 minutes before adding it to the batter.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • In a large bowl, whisk together the pumpkin, granulated sugar, brown sugar, eggs, browned butter, whole milk, and vanilla bean paste until smooth.
  • Add the dry ingredients to the wet ingredients and fold just until combined. Don’t overmix.
  • Fold in the chocolate chips.
  • Divide the batter between the muffin cups, filling them about ¾ full. Sprinkle a few extra chocolate chips over each.
  • Bake at 350°F for about 25–30 minutes, or until the tops spring back and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • For tall, domed muffin tops, fill each muffin cup almost to the top and bake in every other well of the muffin tin, leaving an empty space between each muffin. This gives the muffins more room for heat to circulate and helps them rise higher and spread into those big bakery-style tops.
  • Let cool in the pan for about 5–10 minutes, then transfer to a cooling rack.
  • Storage: Allow the muffins to cool completely before storing. Keep them in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week. For longer storage, freeze the muffins in a freezer-safe bag or container for up to 3 months. Thaw at room temperature or warm in the microwave for 20–30 seconds before serving.
