Bakery Style Brown Butter Pumpkin Chocolate Chip Muffins
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp cinnamon
- ½ tsp kosher salt
- 1 15 oz can pumpkin purée
- ¾ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup butter
- ⅓ cup whole milk
- 1 tsp vanilla bean paste
- 1 cup chocolate chips
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350°F.
- Line a standard muffin pan with liners. Add ½ cup butter to a light-colored saucepan over medium heat. Melt, then continue cooking, stirring or swirling frequently. The butter will foam and sizzle; keep cooking until the milk solids at the bottom turn golden brown and the butter smells toasty and nutty. Immediately pour it into a heatproof bowl, including all the browned bits, so it doesn’t burn. Let cool for about 5 minutes before adding it to the batter.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In a large bowl, whisk together the pumpkin, granulated sugar, brown sugar, eggs, browned butter, whole milk, and vanilla bean paste until smooth.
- Add the dry ingredients to the wet ingredients and fold just until combined. Don’t overmix.
- Fold in the chocolate chips.
- Divide the batter between the muffin cups, filling them about ¾ full. Sprinkle a few extra chocolate chips over each.
- Bake at 350°F for about 25–30 minutes, or until the tops spring back and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let cool in the pan for about 5–10 minutes, then transfer to a cooling rack.
