Peanut Butter S'mores Banana Bread

Soft, ripe bananas, gooey chocolate and peanut butter, toasted marshmallows, and a graham cracker crunch, capturing the cozy, campfire spirit in every bite!

Ingredients

  • 3 very ripe bananas
  • 2 eggs
  • cup real maple syrup
  • 5 tbsp melted butter
  • ½ cup Greek or Skyr yogurt plain or vanilla
  • ½ cup peanut butter
  • 1 tsp vanilla
  • cup all purpose flour
  • 1 tsp baking soda
  • ½ cup crushed graham crackers
  • 1 tsp salt
  • 1 cup mini marshmallows
  • 1 cup chopped Reese's
  • ½-¾ cup mini chocolate chips

For the S'mores Topcoat

  • ½ cup mini marshmallows
  • 2-3 chopped Reese's cups
  • 1-2 broken graham crackers

Instructions

  • Mash 3 bananas in a large mixing bowl until smooth. Add 2 eggs, 1 tsp vanilla, 5 tbsp melted butter, ⅓ cup maple syrup, ½ cup peanut butter & ½ cup yogurt. Whisk to combine.
  • In a separate large bowl, add 1¾ cups of flour , ½ cup crushed graham crackers & 1 tsp baking soda to the mixture. Stir until flour streaks are gone, then gently fold in chopped Reese's cups, mini chocolate chips and mini marshmallows.
  • Transfer batter to in a parchment lined 9×5 loaf pan & bake at 350 F for 50-60 mins, until a toothpick inserted comes out with crumbs instead of wet batter.
  • Top loaf with a handful of marshmallows, chocolate chips and a few pieces of broken graham crackers, until the top is covered. Broil for 1-3 minutes until toasted to liking. Slice and enjoy!
