Apple Fritter Loaf Cake

I love apple fritters, but I don’t love the hassle & mess of hot oil frying them at home to enjoy. That is until I transformed them into a baking recipe! a simple & in my opinion, more delicious way to enjoy my favorite fall dessert. Tender, moist cake paired with the delicious spiced apple filling we all know and love, this is a highly requested fall treat in my house!

Apple Fritter Loaf Cake

Ingredients

  • cup brown sugar
  • 3 tsp cinnamon divided
  • 2-3 apples peeled, cored & chopped
  • ⅔ cup + 3 tbsp granulated sugar
  • ½ cup softened butter
  • 2 eggs
  • tsp vanilla
  • cups all purpose flour
  • tsp baking powder
  • 1 tsp salt
  • ½ cup whole milk

For the Glaze:

  • 3 tbsp whole milk
  • 1 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees F. Prep your 9×5” loaf pan with a non-stick spray or line with parchment paper.
  • Mix 1/3 cup brown sugar and 2 tsp cinnamon in a small bowl, set aside. Toss cubed apples with 2 tbsp granulated sugar and remaining 1 tsp of cinnamon in a separate bowl, set aside.
  • In a stand mixer or with a hand mixer, beat 1/2 cup softened butter and 2/3 cup granulated sugar together until fluffy, approx. 2 minutes. Add eggs and vanilla, continue to mix.
  • Gently mix flour, baking powder and salt in separate bowl, then slowly add to creamed butter mixture until fully combined. Add 1/2 cup milk into this mix until smooth.
  • Pour half the batter into the lined loaf pan, and add half of the apple mixture on top of the batter in the pan. Sprinkle half of the brown sugar + cinnamon mixture on top of the apple layer.
  • Repeat and add the remaining batter overtop and top with remaining apples and brown sugar mix. Use a knife or toothpick to gently swirl the apple mixture into the batter, ensuring the apples on top layer or patted into the loaf batter.
  • Bake until toothpick inserted into middle of loaf comes out clean, about 1 hour. Allow loaf to cool on wire rack after baking.

For the Glaze:

  • Combine and mix powdered sugar with remaining 3 tbsp of milk. Add more milk or powdered sugar to reach desired consistency. Drizzle loaf with glaze, slice & enjoy!

    I made this with peaches and walnuts instead of apples. Only because I didn’t have apples but I did have peaches. It was delicious!

    This Loaf was delicious!!! Took it to a cook out as dessert and it was a hit! Can’t wait to try more of your recipes.
