Apple Fritter Muffins

Craving that warm, cinnamon-sugar apple fritter taste you love from the pumpkin patch—but without the mess of hot oil? These Apple Fritter Muffins are your new fall favorite! Packed with tender apples, cozy spices, and a sweet glaze on top, this easy baked version delivers all the nostalgia of a fresh apple fritter in the convenience of a grab-and-go muffin. No frying required, just pure autumn comfort in every bite!

These muffins bake up soft and fluffy on the inside with pockets of juicy cinnamon-spiced apples in every bite. The layers of brown sugar and vanilla batter create that classic fritter-style swirl, giving you bakery-level flavor with simple pantry ingredients. As they bake, the apples melt slightly into the batter, keeping each muffin moist and rich without feeling heavy. Finished with a sweet vanilla glaze, they’re perfect warm from the oven or enjoyed as a cozy fall treat throughout the week.

Tips for the Best Apple Fritter Muffins

Use firm apples. Varieties like Honeycrisp or Granny Smith hold their shape and prevent the muffins from becoming too mushy.

Layer for flavor. Adding apples and cinnamon sugar in layers helps create that classic fritter-style swirl.

Swirl gently. Use a toothpick or knife lightly so the muffins stay layered instead of fully mixed.

Cool before glazing. Letting them cool ensures the glaze sits on top instead of melting into the muffins.

Frequently Asked Questions

Q: Can I use different types of apples?
A: Yes! Granny Smith adds a tart contrast, while Honeycrisp or Fuji will make them sweeter and juicier.

Q: Can I skip the glaze?
A: Yes, but the glaze adds that classic apple fritter finish. Without it, they’ll be less sweet but still delicious.

Q: How should I store leftovers?
A: Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Warm slightly before serving for best texture.

  • cup + 3 tbsp granulated sugar divided
  • ½ cup softened butter
  • 2 eggs
  • tsp vanilla
  • cups all purpose flour
  • tsp baking powder
  • 1 tsp salt
  • ½ cup + 3 tbsp whole milk divided
  • 1 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees F. Prep your muffin pan with muffin liners.
  • Mix 1/4 cup brown sugar and 2 tsp cinnamon in a small bowl, set aside. Toss cubed apples with 2 tbsp granulated sugar and remaining 1 tsp of cinnamon in a separate bowl, set aside.
  • In a stand mixer or with a hand mixer, beat 1/2 cup softened butter and 2/3 cup granulated sugar together until fluffy, approx. 2 minutes. Add eggs and vanilla, continue to mix.
  • Gently mix flour, baking powder and salt in separate bowl, then slowly add to creamed butter mixture until fully combined. Add 1/2 cup milk into this mix until smooth.
  • Fill each muffin tin with about 2 tbsp of batter, sprinkle apple mixture on top of the batter in the pan. Sprinkle about a tbsp of the brown sugar + cinnamon mixture on top of the apple layer.
  • Repeat and add an additional tbsp of batter overtop and top with another tbsp of apples and brown sugar mix. Use a knife or toothpick to gently swirl the apple mixture into the batter, ensuring the apples on top layer or patted into the batter.
  • Bake until toothpick inserted into middle of muffin comes out clean, about 30-40 mins. Allow to cool on wire rack after baking.
  • For the Icing: Combine and mix powdered sugar with remaining 3 tbsp of milk. Add more milk or powdered sugar to reach desired consistency. Drizzle over muffins once cool.
