I love that you can see each ingredient in each bite! The bananas naturally sweeten them, but I choose to add a tablespoon of honey or real maple syrup as well.

This recipe makes 12 energy bites. Depending on the size of your bananas, you may need to increase the amount of oats or coconut you include to thicken the mixture enough to form balls. Add more 1/4 cup at a time until you’re satisfied with the consistency.

Ingredients
- 2 ripe bananas mashed

- 1 cup rolled oats + more if needed to thicken consistency
- ½ cup cacao nibs or rough chopped chocolate chips
Instructions
- Mash bananas and mix in peanut butter and honey. Add remaining ingredients of coconut, chia seeds, oats and chocolate chips until well combined.
- If too sticky, add more oats ¼ cup at a time. Use an ice cream scoop to form balls and place in a sealable container to chill in the fridge overnight or at least 4 hours before enjoying.
Notes
I use peanut butter for this recipe but you could also swap other nut butters.
